Ingredients:
- 1/4 cup Hidden Valley Sweet Chili Ranch Dressing
- 1 tbsp. l. olive oil
- 1 medium yellow onion, chopped
- 450 g of ground beef
- 8 corn tortillas, 15 cm in diameter.
- 1 cup grated cheddar or pepper jack
- 1 tomato, cut into pieces
Preparation:
- Preheat oven to 200°C.
- Heat oil in a skillet over medium heat. Add the onion and cook for 5-7 minutes, or until softened. Add the ground beef and cook for 7-10 minutes, breaking up any lumps with a wooden spoon, until no longer pink, or until the internal temperature reaches 160°F (71°C).
- Transfer the meat mixture to a large bowl and let cool slightly. Add the ranch dressing and toss to combine. Place one tortilla on a parchment-lined or greased baking sheet. Top with a quarter of the beef. Top with another tortilla, a quarter of the cheese, and a tomato.
- Assemble three more quesadillas in the same manner.
- Bake for 7-10 minutes, or until the tortillas are crispy and the cheese is melted. Serve immediately. Drizzle with additional ranch dressing, if desired. Transfer any leftovers immediately to a container and refrigerate. Do not leave the quesadillas on the counter for more than 2 hours (or more than 1 hour if the temperature is above 90°F).
