Sweet Potato Tater Tots with Honey Mustard topcook.tomathouse.com
Ingredients:
Tater-tots
- 2 medium sweet potatoes (about 700 g)
- 3-4 liters of vegetable oil
- 1 large bag salted potato chips, crumbled
- 4 large eggs, beaten
- 2 cups premium flour
Honey mustard
- 0.5 cup mayonnaise
- 0.5 cup Dijon mustard
- 2 tablespoons of honey
- 1 tbsp. apple cider vinegar
- 1/4 tsp cayenne pepper
Preparation:
- Tater Tots:
Preheat oven to 190°C. Prick the sweet potatoes with a vetch twig, place them on a baking sheet, and bake until tender, about 1 hour.
- Pour oil into a frying pan and heat to 175°C.
- Peel the baked sweet potato and mash it until smooth. Season with salt and pepper and add 1 cup of crushed potato chips. Place the remaining crumbs in a shallow bowl.
- Place the beaten eggs and flour in separate shallow bowls, season with salt and pepper. Form the puree into 4 cm balls and shape them into oblong shapes.
- Dredge the tater tots in flour; then dip in egg, letting any excess drip off; then roll in chips to coat.
- Fry the tater tots until golden brown, 1-2 minutes. Transfer to a paper towel-lined baking sheet and season with salt. Keep warm until ready to serve.
- Honey mustard:
In a bowl, combine mayonnaise, mustard, honey, vinegar, and cayenne pepper until smooth. Serve with potato balls.
