Beef tongue taco

Ingredients:

  • 1.3 kg fresh beef tongue, cut into 4 equal pieces
  • 3 cloves garlic, unpeeled, crushed
  • 1 medium yellow onion, peeled and quartered
  • 1 cup beef broth
  • 1/4 cup chipotle peppers in adobo sauce
  • 1 tbsp. salt
  • 2 tablespoons of oil
  • 2 tsp xanthan gum
  • Warm corn tortillas, homemade or store-bought, for serving
  • Topping: diced onion, cilantro leaves, lime wedges, salsa, and whatever else you like in a taco
  • Special equipment: stovetop pressure cooker

Preparation:

  1. Place the tongue, garlic, onion, beef broth, chipotle adobo sauce, and salt in the pressure cooker. Follow the manufacturer's instructions, secure the lid, and set the pressure cooker over high heat.
  2. Cook for 30 minutes. Following the manufacturer's instructions, quickly release the pressure cooker, then open the lid and use tongs to remove the tongue, leaving the liquid in the pan. Let the tongue cool in a colander under cool running water. Use your fingers or a knife to remove the skin. Dice the meat and sprinkle with coarse salt.
  3. Place a 12-inch cast-iron skillet over medium-high heat and add oil. Heat the oil, then add the beef tongue and cook until evenly browned, about 5 minutes.
  4. Meanwhile, combine the liquid from the pan with xanthan gum to make queso sauce.
  5. Top the tortillas with fried beef tongue, diced onion, and cilantro. Serve with lime wedges, queso, and salsa.
