Ingredients:
- 1 egg white
- 1 teaspoon hazelnut extract
- 30 g of hazelnut paste
- 1/4 cup sugar
- 1/4 cup premium flour, sifted
- 3 tablespoons butter, melted but cooled
- 1 cup melted chocolate
- 0.5 cup chopped hazelnuts
Preparation:
- Preheat oven to 190°C.
- Lightly whisk together the egg white, hazelnut extract, nut butter, and sugar in a bowl. Mix in the sifted flour until smooth. Add the butter.
- Spoon 2 teaspoons of dough onto a baking sheet lined with a silicone mat and spread into an 8 cm circle. Bake for about 5 minutes, until the edges are browned. Remove the cookies from the oven.
- Working with one cookie at a time, place a note in the center. Fold the cookie in half, with the cut side facing out.
