Ingredients:
- 2 cups premium wheat flour
- 1 teaspoon of salt
- 3/4 cup margarine
- Ice water
- Filling, see recipe below
- Serving suggestion: warm slice with vanilla ice cream
Filling:
- 6-7 cups of thinly sliced apples (preferably Green Golden)
- 1 cup white sugar
- 1 cup brown sugar
- 1 teaspoon cinnamon
- 1/2 - 1 cup premium wheat flour
- 2 tbsp (30 g) butter
Preparation:
- In a medium bowl, cut the margarine and salt into the flour by hand or with a pastry cutter until the mixture forms fine crumbs. Pour a tablespoon of ice water over the mixture and knead until the dough is moistened. Repeat, adding 6-8 tablespoons of water (one at a time) until the dough is moistened. Try not to overmix.
Preheat oven to 190°C. Divide the dough in half and roll into a ball. Roll one ball into a circle large enough to fit a 23-25 cm diameter springform pan. To transfer the dough to the pan, wrap it around a rolling pin and unroll it over the pan. Be careful not to stretch the dough. Trim it flush with the edges of the pan. Spread the apple filling into the lined pan, making sure it's evenly spread. Cut the butter into small pieces and spread it over the filling.
Roll out the remaining dough into a 30cm circle. Place it on top of the filling. Trim the dough, leaving a 2.5cm border. If desired, create a decorative edge. Poke holes for steam to escape. Sprinkle the pie with a little sugar and cinnamon.
To prevent the edges from burning, cover them with foil. Bake for 25 minutes. Remove the foil and bake for another 20-25 minutes, until golden brown. Serve warm with vanilla ice cream.
Apple filling:
In a medium bowl, combine the apples with the brown and white sugar. Add the flour and cinnamon, and continue mixing until the apples are completely coated. Serves 4-6.
