Ingredients:
For the buffalo wings:
- 1.4 kg chicken wings, cut into three pieces, wing tips removed
- Vegetable oil for deep-frying
- 1 cup flour
- 1 tbsp paprika
- 3/4 cup hot sauce
- 120 g butter
- 2 tablespoons of honey
For the dipping sauce:
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1 tbsp. milk
- 1/2 cup crumbled blue cheese
- 1 clove of garlic, chopped
- Juice of 1/2 lemon
- Salt and freshly ground pepper
Preparation:
- Prepare the dipping sauce: Combine sour cream, blue cheese, mayonnaise, garlic, milk, and lemon juice in a food processor. Season with salt and pepper. Cover the dipping sauce with plastic wrap and refrigerate until serving.
- Prepare the wings: Pour 2.5 cm of vegetable oil into a deep frying pan and heat to 190° C.
- Combine flour and paprika in a bowl. Dredge the wings in the flour and deep-fry, working in batches, on all sides until crisp and golden brown, about 15 minutes. Transfer the wings to a paper towel to absorb excess oil.
- Meanwhile, combine the hot sauce, butter, and honey in a small saucepan. Place on the stovetop and cook, stirring occasionally, over medium heat until thickened, about 10 minutes. Transfer the fried wings to the saucepan and toss with the sauce. Serve the buffalo wings with the dipping sauce.
