Fruit pizzas for the kids' table topcook.tomathouse.com
Ingredients:
Sand base
- 1 and 1/3 cups butter
- 1.5 cups of sugar
- 1 teaspoon orange zest
- 1 tsp vanilla extract
- 2 eggs
- 3 tbsp. milk
- 4 cups premium wheat flour
- 3 tsp baking powder
- 1/2 tsp salt
Filling
- 1 can (370 g) marshmallow cream (whipped egg whites with hot syrup added)
- 1 pack (225 g) cream cheese
Fruits
- Sliced kiwi
- Sliced peaches
- Blueberry
- Raspberry
- Strawberry
- Red and green grapes in halves
Preparation:
- For the base: Preheat oven to 180°C. In a large bowl, thoroughly beat the butter with the sugar, orange zest, and vanilla extract. Add the eggs and beat until light and fluffy. Add the milk and mix.
- In a medium bowl, combine the dry ingredients (flour, baking powder, and salt). Then fold them into the butter mixture. Wrap the dough in plastic wrap, form it into a disk, and refrigerate for an hour (or freeze for 20 minutes).
- Roll the dough into one large rectangle. Then, using an 11 cm diameter cookie cutter, cut out circles from the dough.
Bake until the crusts are golden brown but not too crisp, 8 to 10 minutes. Remove from the oven and let cool completely.
- For the filling: Using a mixer fitted with a whisk attachment, beat the marshmallow cream and cream cheese until light and fluffy.
Spread the creamy mixture on the cooled crusts and garnish with fruits and berries. Let everyone assemble their own pizza, spreading it with cream cheese frosting and topping it with their favorite fruits!
