Ingredients:
Refueling:
- 1/3 cup fresh lime juice
- 1.5 tbsp. honey
- 3/4 tsp ground ginger or minced fresh ginger
Fruit salad:
- 6 cups of your favorite fresh fruits and berries, such as:
Peeled and sliced bananas
- Peeled and diced mango
- Pineapple cut into small pieces and kiwi sliced into halves
- Blueberries, blackberries, raspberries and halved strawberries
- Peeled and sliced oranges
Preparation:
- In a small bowl, combine lime juice, honey, and ginger. Combine the fruit and berries in a large salad bowl. Drizzle with the dressing and toss. If using bananas, serve immediately.
