Ingredients:
Salad dressing
- 1/2 cup peanut butter with pieces
- 1/2 cup coconut milk
- 1 tbsp soy sauce, plus extra for serving
- 2 tsp fresh lime juice
- 2 tsp hot pepper sauce
- 1 teaspoon sesame oil, plus a little more
Fish salad
- 450 g of large-diced ahi tuna for sushi
- 2 tomatoes, diced
- 200 g chopped smoked salmon (optional)
- 1/4 cup chopped red onion
- 3/4 cup washed and chopped ogo seaweed (optional)
- 5 tsp chopped toasted macadamia nuts
- 3 tablespoons chopped fresh cilantro leaves
- Juice of 1 lime
- Sea salt
- Deep-fried wontons for serving
- Head lettuce leaves for serving
Preparation:
- In a food processor, combine the peanut butter, coconut milk, soy sauce, lime juice, hot sauce, and sesame oil. Blend on high speed.
- Place the tuna in a large bowl. Add the tomatoes, smoked salmon, red onion, seaweed, macadamia nuts, cilantro, and lime juice.
- Drizzle the peanut butter mixture over the tuna and toss to coat. Season with sesame oil, soy sauce, and salt to taste. Serve on wontons or wrapped in lettuce leaves.
