Spiced Roasted Chickpeas and Spinach

Ingredients:

  • 2 cans of chickpeas, drained, rinsed and patted dry
  • 3.5 tbsp olive oil, plus a little extra for greasing
  • 1.5 tsp paprika
  • 1/2 teaspoon chipotle chili powder
  • 1 lemon
  • 4 cups baby spinach
  • 1 teaspoon of salt

Preparation:

  1. Toss chickpeas with 2 tablespoons olive oil, 1 1/2 teaspoons red pepper flakes, 1/2 teaspoon chipotle powder, and 1 teaspoon salt.

    Place the chickpeas in a greased baking dish and bake in a preheated oven at 200°C until golden brown, 20-25 minutes. Remove and cool.

    Add young spinach, 1.5 tbsp olive oil to the chickpeas, and salt to taste.

    Place the baked chickpeas on plates and garnish with lemon wedges.
