Spicy Thai Green Papaya Salad topcook.tomathouse.com
Ingredients:
- 2 large or medium green papayas, peeled, seeded and coarsely grated or thinly sliced into strips
- 2 carrots, peeled and coarsely grated or cut into thin strips
- 1/2 cup fresh lime juice
- 3 tablespoons plus 1 teaspoon Thai fish sauce
- 1/4 cup chopped shallots
- 3 Thai bird's eye or serrano chilies, seeded and chopped
- 3 tablespoons coconut sugar or golden cane sugar
- 1.5 tsp. crushed garlic
- 2 tablespoons chopped fresh mint leaves
- 1 tablespoon chopped fresh cilantro leaves, plus 1/3 cup extra for garnish
- 1/2 cup finely chopped peanuts for garnish
Preparation:
- In a blender, combine lime juice, fish sauce, shallots, chili pepper, sugar, and garlic. Blend until smooth. Let sit for 15 minutes to allow the flavors to meld.
- In a medium non-stick bowl or salad bowl, combine the papaya, carrots, mint leaves, and chopped cilantro. Add the dressing and toss thoroughly. Garnish with cilantro leaves and chopped peanuts. Serve immediately.
