Preparation:Place 1 kg (2.3 lb) peeled potatoes (red-skinned potatoes work best for mashing) and 4 peeled garlic cloves in a saucepan; cover with a little salted water. Bring to a boil, then simmer until tender, 15 to 20 minutes. Discard 1 cup of the cooking liquid; discard the remaining water. Mash the potatoes with the reserved cooking liquid and 1/2 cup of kefir each, 3 tbsp (45 g) butter, 2 tbsp chopped dill and 2 springs of green onion, adding the remaining cooking liquid if necessary.
