Homemade White Sauce Mix

Ingredients:

  • 2 cups of skim milk powder
  • 1 cup wheat flour
  • 2 teaspoons of salt
  • 1 cup (230 g) butter (margarine or vegetable oil)
  • 1/8 tsp ground white pepper

Preparation:

  1. In a medium bowl, combine dry milk, flour and salt, whisking until thoroughly combined.
  2. Using a pastry cutter or two knives, cut the butter into the flour until the mixture resembles cornmeal.
  3. Place the mixture in an airtight container and store in the refrigerator. Use the white sauce mixture within 2 months.
  4. To make white sauce, combine 1/2 cup white sauce mixture and 1 cup cold water in a small saucepan.
  5. Simmer the sauce over low heat until smooth, whisking constantly. Season to taste. You'll get about 1 cup of classic white sauce.
