Watermelon gazpacho topcook.tomathouse.com
Ingredients:
- 2 cups watermelon, diced
- 1 large tomato, pureed
- Half a serrano pepper
- 1 teaspoon red wine vinegar
- 1/4 cup olive oil
- 2 tablespoons chopped red onion
- Half a cucumber, seeded and finely chopped
- 2 tbsp chopped dill, plus extra for serving
- 1/4 cup crumbled feta cheese
Preparation:
- In a blender, combine the tomatoes, pepper, and 1 cup of watermelon. Pour in the red wine vinegar and olive oil. Puree everything, then add the onion, cucumber, and dill. Season with salt and pepper to taste. Blend until smooth.
- Pour the gazpacho into chilled bowls, sprinkle with dill, cheese, and the remaining watermelon cubes. Serve.
