Cookies "Regina"

Ingredients:

  • 280 g butter
  • 1 cup of sugar
  • 3 large eggs
  • 4 cups of flour
  • 1 tbsp baking powder
  • 1 tsp vanilla extract
  • Zest of 1 small lemon
  • 1 cup of milk
  • 2 cups sesame seeds

Preparation:

  1. Preheat oven to 175°C and line 2 baking sheets with parchment paper or silicone baking mats.
  2. In a food processor, blend the butter and sugar until light and fluffy, then add the eggs one at a time. Add the flour, baking powder, vanilla, and lemon zest and continue mixing until a stiff dough forms.
  3. Scoop golf-ball-sized portions of the dough and roll them into ovals with your hands. Dip the dough in milk, then roll in sesame seeds. Place on prepared baking sheets, spacing them 2 inches apart. Bake until golden brown, 10-12 minutes. Cool the cookies completely on the baking sheets, or cool them on the baking sheets for 2 minutes, then transfer them to a wire rack and cool completely (if using the same baking sheets for another batch). The cookies can be stored in an airtight container for about 3 weeks.
