Ingredients:
- 0.5 cups oatmeal
- 1 small banana, peeled and cut into 4 pieces
- 1.5 cups coconut milk
- Juice of half a small lemon (about 1 tbsp.)
- 0.5 tsp vanilla extract
- 3/4 cup frozen mango, diced
- 3/4 cup frozen pineapple, diced
- Fresh pineapple wedges, for serving
Preparation:
- Place the oats in a blender, cover, and pulse until smooth. Add 2 ice cubes, banana, coconut milk, lemon juice, vanilla, and 1/8 teaspoon salt. Cover and pulse until smooth. Add the mango and pineapple, cover, and pulse until smooth, about 1 minute.
- Pour the smoothie into two large chilled glasses and garnish with pineapple wedges.
