Oatmeal casserole with berries

Ingredients:

    Oatmeal

  • 2 teaspoons butter
  • 1 and 1/4 cups rolled oats
  • 3 tbsp. l. brown sugar
  • 1 and 2/3 cups almond milk
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract

    Topping

  • 1/3 cup sliced ​​almonds with skins
  • 1/3 cup oatmeal
  • 1/3 cup brown sugar
  • 2 tbsp (30 g) butter, melted
  • 1 tbsp. whole grain flour
  • 1/8 tsp ground cinnamon
  • 350 g of assorted frozen berries (strawberries, blueberries, blackberries), defrosted (if measuring, then 2.5 cups frozen; 1.5 cups defrosted)
  • Greek yogurt 2% fat or low-fat milk, for serving (optional)

Preparation:

  1. Preheat oven to 175°C. Grease a 2-quart baking dish or an 8-inch square pan with butter.
  2. OatmealIn a large bowl, combine the oats, sugar, and 1/8 teaspoon salt. In a separate medium bowl, combine the almond milk, eggs, vanilla, and almond extract. Pour the milk mixture into the oats and mix well.
  3. Topping: In a medium bowl, combine almonds, oats, sugar, butter, flour, cinnamon and 1/8 teaspoon salt.
  4. For assemblyPour the oats into the prepared baking dish. Arrange the berries on top (including any juices that may have escaped). Sprinkle with the topping. Bake until lightly browned and set, about 50 minutes. Cool on a wire rack for 10-15 minutes. Serve warm with a dollop of yogurt or a splash of milk, if using.
