Watermelon slices with cherry tomatoes, feta and arugula

Ingredients:

  • 1 large seedless watermelon
  • 0.5 cup arugula
  • 1/4 cup crumbled feta
  • 1/4 cup thinly sliced ​​red onion
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup balsamic vinegar
  • 1 tbsp. sugar

Preparation:

  1. RefuelingIn a small saucepan, combine the balsamic vinegar and sugar. Cook over medium-high heat until the mixture has reduced by half and thickened.
  2. Cut a 2-cm-thick disc from the center of the watermelon and trim off the rind. Cut the disc into 6 wedges, then reassemble the wedges into a circle.
  3. Evenly distribute arugula, feta, red onion, and cherry tomatoes among the watermelon slices. Drizzle with balsamic vinaigrette.
