Ingredients:
- 0.5 cups premium flour
- 0.5 cup whole grain or white whole grain flour
- 1/4 cup oatmeal
- 1 tbsp. wheat germ flakes
- 2 tsp chia seeds (optional)
- 0.5 tsp salt
- 1/4 tsp ground cinnamon
- 1/3 cup natural peanut butter, creamy
- 1/3 cup brown sugar
- 3 tablespoons of vegetable oil
- Protein of 1 large egg
- 30 g dark chocolate, melted
Preparation:
- Preheat oven to 350°F (175°C). Line a 9 x 13-inch baking pan with aluminum foil, allowing 2 inches of foil to overhang the sides. Lightly spray with cooking spray.
- In a medium bowl, combine both flours, oats, wheat germ, chia seeds, if using, salt, and cinnamon.
- In another medium bowl, combine the peanut butter, brown sugar, vegetable oil, and egg white. Beat with a mixer until creamy, about 2 minutes. Add the dry ingredients and beat on low speed until the mixture is moist and crumbly, holding together when pressed together.
- Pour the dough into the prepared pan and press into an even layer. Bake until golden brown, 25-30 minutes. Let cool completely. Drizzle with chocolate. When the chocolate has set, break the bar into 18 5cm pieces.
