Ingredients:
- 3 Hass avocados, halved, peeled and diced
- 2 small ripe firm pears or 1 large pear, cored and finely chopped
- 2 tbsp chopped cilantro
- 1.5 tbsp freshly squeezed lime juice
- 3/4 tsp ground coriander
- 1 clove garlic, finely chopped
- 1 small jalapeño, finely chopped (reserve some seeds)
- 3 tablespoons chopped roasted pistachios
- Lime wedges for serving
- Blue corn chips, for serving
Preparation:
- Combine the avocado and pears in a medium bowl. Stir in the cilantro, lime juice, coriander, 1/2 teaspoon salt, garlic, and jalapeño. Season with salt and pepper to taste.
- Transfer to a serving bowl, sprinkle with pistachios and serve with lime wedges and blue corn chips.
