Spring vegetables with green pea dip topcook.tomathouse.com
Ingredients:
- 1 cup frozen peas
- 2 small cloves of garlic
- 0.5 cup mayonnaise
- 1 tbsp lemon juice
- 1 tbsp. l. olive oil
- 1 teaspoon chopped dill
- 1 pinch of cayenne pepper
- Vegetable platter: for example, steamed asparagus and green beans, sliced bell peppers, radishes, carrots, cucumbers
Preparation:
- Bring a medium saucepan of water to a boil. Add the peas and cook until tender, about 5 minutes. Drain in a colander and rinse under cold water.
- Turn on the food processor and add the garlic until finely chopped. Add the peas, mayonnaise, lemon, olive oil, dill, cayenne pepper, 1/4 teaspoon salt, and black pepper and process until smooth.
- Transfer the dipping sauce to a small bowl. Serve with vegetables for dipping.
