Healthy layered fruit ice with strawberry, coconut and blueberry flavors

Ingredients:

  • 2 cups strawberries, hulled and coarsely chopped
  • 3 tablespoons coconut cream
  • 2 tablespoons of honey
  • 0.5 cups unsweetened coconut milk
  • 2 tablespoons lime juice
  • 2 cups blueberries
  • Special equipment: 6 fruit ice cube trays with a capacity of 100-120 ml.

Preparation:

  1. Place 6 popsicle molds in the freezer for 30 minutes.
  2. In a blender, combine the strawberries and 1 tablespoon each of coconut cream and honey. Blend until smooth. Pour into a liquid measuring cup. Rinse the blender.
  3. Combine coconut milk, 1 tablespoon each of coconut cream and lime juice in a blender. Blend until smooth.
  4. Evenly distribute the strawberry puree among the frozen molds. Carefully pour coconut milk over the strawberry puree. Freeze for 30 minutes. Rinse the blender.
  5. When you're ready to fill the molds completely, combine the blueberries with the remaining 1 tablespoon coconut cream, honey, and lime juice in a blender. Blend until smooth (see Note).

    Note

    If you want the ice to set faster, reverse the order of filling the molds: add the strawberry puree, then the blueberry puree, finish with the coconut mixture, and place in the freezer to set. The color won't be as vibrant, but the ice will still be delicious!
  6. Remove the molds from the freezer, fill with blueberry puree and insert the sticks.
  7. Freeze for at least 4 hours or overnight. Before serving, let sit at room temperature for 5 minutes, then remove the popsicles from the molds.
