Pan-fried T-bone steak

Ingredients:

  • 0.7 kg. T-bone steak on the bone
  • 1 tbsp. l. rapeseed oil

Preparation:

  1. Preheat oven to 230°C. Remove the steak from the refrigerator half an hour before cooking.
  2. Heat a large skillet over high heat. Pat the meat dry and season generously with salt and pepper. Add the oil to the hot skillet, and when it begins to smoke, add the steak. Reduce the heat slightly and cook until golden brown, about 4 minutes per side. Transfer the skillet to the oven. Bake until a meat thermometer inserted into the side of the steak reads 120°F (49°C) for medium-rare, about 6-8 minutes. Transfer the steak to a cutting board and let it rest for 10 minutes. Remove the meat from the bone and slice against the grain.
