Baked flatbread with cheese, bacon and fried eggs topcook.tomathouse.com
Ingredients:
- 4 naan breads or pitas without cavities
- 6 slices of bacon
- 1 small onion, thinly sliced
- 3 small or 2 large tomatoes, chopped
- Hot sauce, to taste
- 8 slices of cheese
- 4 large eggs
- 5 cups mixed small salad greens
- 1 tbsp. white wine vinegar
Preparation:
- Preheat oven to 200°C. Place the tortillas on two foil-lined baking sheets and bake until crisp, about 10 minutes.
- Meanwhile, in a large nonstick skillet over medium heat, cook the bacon, turning occasionally, until crisp, 8-10 minutes. Transfer to paper towels to drain, then crumble. Discard 1 tablespoon of the rendered egg fat from the skillet.
- Add the onion to the remaining fat in the skillet and increase the heat to medium-high. Season with salt and pepper and cook, stirring, until the onion is browned and softened, 5 minutes. Add the tomatoes and cook until most of the liquid has evaporated, 3-5 minutes. Season with salt, pepper, and drizzle with hot sauce to taste.
- Spread the onion-tomato mixture on the flatbreads and top with 2 slices of cheese. Return to the oven and bake until the cheese is melted, 3-5 minutes.
- Meanwhile, in an empty skillet, heat the reserved bacon drippings over medium heat and beat in the eggs. Season with salt and pepper to taste and cook until the whites are set, about 3 minutes.
- Top each tortilla with a fried egg and sprinkle with bacon. Toss the salad greens with vinegar and season with salt and pepper to taste. Serve the tortillas with salad and hot sauce.
