Ingredients:
- 1 cup brown sugar
- 1 cup cold heavy cream
- 1 tbsp powdered sugar
- 3 tablespoons caramel sauce
- A pinch of salt
- 0.5 tsp butter extract (flavoring)
- 1/4 tsp vanilla extract
- 6 cups cold sparkling water
Preparation:
- Combine brown sugar and 1/2 cup water in a small saucepan and heat over medium heat. Cook, stirring occasionally, until the mixture comes to a boil and the sugar dissolves, 2-3 minutes. Transfer to a small bowl or liquid measuring cup and refrigerate for about 1 hour.
- In a large bowl, beat the cream and sugar with a mixer on medium speed until soft peaks form. Stir in caramel sauce, add salt and beat until medium peaks form. Cover and refrigerate.
- Stir the butter and vanilla extracts into the cold sugar syrup. For each serving, combine 1 cup of sparkling water with 3-4 tablespoons of sugar syrup in a chilled glass. Top with caramel whipped cream.
