Easy Italian Salad Dressing

Ingredients:

  • 1 medium tomato, cut in half
  • 1 tbsp red wine vinegar
  • 1 tbsp. freshly squeezed lemon juice
  • 2 teaspoons Dijon mustard
  • A pinch of sugar
  • 2 tbsp. l. olive oil
  • 1/2 clove garlic, minced
  • 1/8 tsp dried oregano
  • 1/8 tsp dried basil
  • Sea salt and freshly ground pepper

Preparation:

  1. Grate the tomatoes on a coarse grater, place the pulp and juice in a bowl, discard the skins.
  2. Add 1/4 cup water to the bowl, wine vinegar, lemon juice, Dijon mustard, sugar, olive oil, garlic, oregano, basil, 1/4 teaspoon salt, and pepper to taste. Whisk until smooth.
