Ingredients:
- 700 g sweet potato
- 1 teaspoon chili powder
- Juice of 1 lime
- 2/3 cup cilantro
- 3 tablespoons sunflower seed paste
Preparation:
- Combine 1 lb (0.7 kg) sweet potatoes (cut into 2.5 cm cubes) with 2 tbsp olive oil, adding 1 tsp of each. chili powder and coarse salt, as well as a pinch of ground black pepper. Place on a baking sheet and bake in the oven at 230°C (450°F), stirring halfway through, until crisp, 35-45 minutes.
- In a blender, combine 1/4 cup warm water with 1 crushed garlic clove, the juice of 1 lime, 2/3 cup cilantro, 3 tablespoons sunflower paste, and 1/4 teaspoon coarse salt. Serve with potatoes.
