Warm pasta salad with zucchini and tomatoes

Ingredients:

  • 340 gr. mezi rigatoni or other short pasta
  • 900 g of tomatoes of different varieties, finely chopped
  • 1 small yellow zucchini
  • 1/4 cup grated Grana Padano or Parmesan cheese, plus more for garnish
  • 110 g mozzarella (regular or smoked), coarsely chopped
  • Coarse salt
  • 1 clove of garlic
  • 1/4 cup extra virgin olive oil, plus more for drizzling
  • 1 bunch of basil, leaves finely chopped
  • Freshly ground pepper

Preparation:

  1. Bring a large pot of salted water to a boil. Add the pasta and garlic and cook according to package directions. Reserve 1 cup of the water and drain the rest.
  2. Meanwhile, slice the zucchini thinly using a wide-sided grater or a vegetable peeler. Place the zucchini, tomatoes, olive oil, and basil in a large bowl. Add 1 teaspoon of salt and pepper to taste.
  3. Crush the cooked garlic with the flat side of a knife and add it to the bowl along with the pasta, Grana Padano cheese and mozzarella.

    Mix well, adding enough of the reserved water to keep the mixture slightly moist. Season with salt and pepper. Divide among plates, drizzle with olive oil, and sprinkle with more. Grana Padano cheese.
