Shrimp baked in garlic sauce

Ingredients:

  • 1 kg. unpeeled shrimp
  • 3 tbsp. l. olive oil
  • 2 tbsp. dry white wine
  • 12 tbsp (170 g) butter at room temperature
  • 4 crushed cloves of garlic
  • 1/4 cup chopped shallots
  • 3 tbsp chopped fresh parsley leaves
  • 1 teaspoon chopped fresh rosemary leaves
  • 1/4 tsp crushed red hot pepper
  • 1 teaspoon grated lemon zest
  • 2 tablespoons freshly squeezed lemon juice
  • 1 egg yolk
  • 2/3 cup breadcrumbs
  • Salt and ground black pepper
  • Lemon wedges, for garnish

Preparation:

  1. Preheat oven to 220C.
  2. Peel the shrimp, place them in a bowl, and toss with olive oil, wine, 2 teaspoons of salt, and 1 teaspoon of pepper. Let them sit at room temperature while you make the butter-garlic sauce.
  3. In a small bowl, combine the softened butter with the shallot, parsley, rosemary, red pepper flakes, lemon zest, lemon juice, egg yolk, breadcrumbs, 1/2 teaspoon salt, 1/4 teaspoon pepper, and minced garlic.
  4. Take a 35cm oval baking dish and, starting from the outer edge, arrange the shrimp in a uniform position, tails facing the center of the dish. Pour the remaining marinade over the shrimp. Then spread the garlic-butter sauce evenly over the shrimp. Bake for 10 to 12 minutes, until the sauce begins to simmer. If you like a crispy crust, you can leave it in for an additional minute. Serve the shrimp with lemon wedges.
