Ingredients:
- 3/4 cup pecans
- 1.5 cups premium flour
- 1/3 cup sugar
- 1/2 tsp salt
- 1/2 teaspoon of baking soda
- 1 teaspoon baking powder
- 1 large egg
- 1 cup of milk
- 1/2 cup kefir
- 2 tsp vanilla extract
- 2 tbsp (30 g) butter, melted and cooled, plus more for greasing
- 1/4 cup margarine, melted and cooled
- Maple syrup, for serving
Preparation:
- Preheat oven to 180°C. Place pecans on a baking sheet and bake for 5-7 minutes. Cool, then chop. Reduce oven temperature to 90°C.
- In a large bowl, combine flour, sugar, salt, baking powder, and baking soda. In a separate bowl, whisk the egg, milk, kefir, and vanilla extract until smooth. Then, combine the egg mixture, melted butter, and margarine with the flour mixture.
- Preheat a waffle iron and grease it with melted butter. Pour the batter into the waffle iron in batches and sprinkle with 2 tablespoons of toasted pecans.
Bake the waffles until golden brown, then transfer them to a baking sheet and keep warm in the oven. Continue baking the remaining waffles.
When serving, place a piece of butter on each waffle and drizzle with maple syrup.
