Stewed Shiitake Mushrooms

Ingredients:

  • 30 fresh shiitake mushroom caps
  • 2/3 cup sake
  • 4 tablespoons soy sauce
  • 2 tbsp mirin
  • 2 tablespoons of sugar

Preparation:

  1. Wash the mushroom caps and trim the stems. Combine the sake, soy sauce, mirin, and sugar in a saucepan and bring to a boil. Reduce the heat to a simmer and add the mushrooms.
  2. Simmer for 7 minutes. Remove the mushrooms and use immediately for the salad (see recipe). Salad with fish, ginger and shiitake), or serve with meat.
