Decadent Brownies with Marshmallow Frosting topcook.tomathouse.com
Ingredients:
Brownie:
- 100 g of dark chocolate
- 220 g butter
- 4 large eggs
- 2 tbsp. sugar
- 1 tsp vanilla extract
- 1 cup sifted premium flour
Glaze:
- 100 g of dark chocolate
- 220 g softened butter
- 0.5 cup pasteurized egg replacer
- 1 tsp vanilla extract
- 500 g sifted powdered sugar
- 4 cups mini marshmallows
Preparation:
- Preheat oven to 180°C. Grease a 35 x 25 cm baking pan.
Melt the chocolate and butter in a 2-quart bowl in the microwave on high for 3 minutes, stirring every 20-30 seconds, until the chocolate is completely melted. Add the eggs, sugar, and vanilla, mixing well with a spatula. Add the flour and stir. Pour the batter into the prepared pan.
Bake for 25 minutes.
- Prepare the glazeWhile the brownies are baking, melt the chocolate and butter in a medium bowl in the microwave on high for 3 minutes, stirring every 20-30 seconds, until the chocolate is completely melted. Add the egg replacer, vanilla, and sugar and stir well with a spoon. Stir in the marshmallows; they will soften but not melt. Spread the glaze over the warm brownies and bake in a preheated oven at 250°C (400°F) for another 3 minutes.
The glaze will set once the brownies have cooled completely. Once cooled, cut into 4cm squares and store in the refrigerator in a resealable container.
