Marshmallow and Peanut Brownies

Ingredients:

  • 220 g butter, plus a little for greasing the pan
  • 1 cup of premium flour, plus some for dusting the pan
  • 180 g of broken dark chocolate
  • 2 tbsp. sugar
  • 3/4 cup cocoa powder
  • 0.5 tsp salt
  • 4 large chilled eggs
  • 2 tsp vanilla extract
  • 1 cup mini marshmallows
  • 3/4 cup roasted peanuts
  • 1 cup semi-sweet chocolate chips

Preparation:

  1. Line a square baking pan with foil, pressing it into the corners and leaving the sides loose. Grease the foil and dust with flour. Position a rack in the lower third of the oven and preheat to 200°C.
  2. Bring a saucepan of water to a boil over medium-low heat. Place the chocolate and butter in a heatproof bowl; place the bowl over the saucepan (do not let the bowl touch the water). Stir until melted and smooth. Remove the bowl from the saucepan.
  3. Add the sugar, cocoa, and salt to a bowl and mix well with a wooden spoon until smooth. Add the eggs one at a time, beating well after each, until the batter is thick and glossy. Add the vanilla, then 1 cup of flour and mix well. Pour into the prepared pan.
  4. Bake the brownies for about 35 minutes, or until set. Remove from the oven and top with marshmallows, chocolate chips, and peanuts. Return to the oven; continue baking for about 5 minutes, or until the marshmallows are golden.

    Cool in the pan or on a wire rack for 30 minutes. Lift the brownies out of the pan using the foil and transfer them to a cutting board to cool completely before slicing.
