S'mores Cupcake with Brownie Batter

Ingredients:

  • 1/4 cup whole grain graham crackers or 4 crispy cookies, finely crushed
  • 110 g butter, room temperature
  • 1 and 1/4 cups chocolate chips
  • 1/2 cup sugar
  • 2 large eggs at room temperature
  • 2 tsp vanilla extract
  • 1/2 cup premium flour
  • 1/2 cup quinoa flour*
  • 3/4 cup mini marshmallows
  • Special equipment: 24-cup muffin pan or 24 muffin cups

Preparation:

  1. Place the baking sheet in the center of the oven. Preheat the oven to 180°C. Line the baking sheet with parchment paper or place paper liners on it.

    Heat the butter in a small saucepan over low heat. Remove from heat and add 3/4 cup chocolate chips. Stir until the chocolate is melted and the mixture is smooth.
  2. Transfer the mixture to a medium bowl. Add the sugar, eggs, and vanilla. Whisk in the flour until the mixture is completely combined. Add the remaining 1/4 of the chocolate chips.

    Fill each paper cup with approximately 2 tablespoons of batter. Place 3 mini marshmallows in the center of the batter. Sprinkle with 1/2 teaspoon of cookie crumbs. Bake for 10-12 minutes. Cool for 20 minutes and serve.

    *Quinoa flour is available in health food stores.
