Ingredients:
Filling
- 6 cups blackberries
- 1/4 cup sugar
- 1/4 tbsp. maple syrup
- 1 teaspoon vanilla extract
- 2 - 3 tablespoons flour
- Butter for greasing the baking pan
Dough
- 1 and 1/3 cups premium flour
- 1/3 cup sugar, plus more for sprinkling
- 2 and 1/4 teaspoons baking powder
- 1/2 tsp salt
- 6 tbsp (90 g) butter at room temperature
- 1 egg category CO
- 1/2 cup buttermilk
Preparation:
- Preheat the oven to 190°C (375°F) and grease a baking pan. Make the filling: combine the blackberries, sugar, maple syrup, and vanilla in a medium bowl. If the berries are juicy, add flour. Transfer to the prepared baking pan.
- Make the toppingCombine flour, sugar, baking powder, and salt in a large bowl. Using your hands, knead the butter into the flour, mix well, and set aside.
Combine the egg, buttermilk, and vanilla in a small bowl; stir into the flour mixture until smooth. Spread the batter evenly over the berries and sprinkle with sugar.
- Place the pan on a rack in the oven and bake until the top is golden brown and the filling is bubbly, about 40 minutes. Cool slightly before serving.
