topcook.tomathouse.com

Ingredients:

  • 2 cups of oatmeal
  • 1/2 cup dried cranberries
  • 1 cup chopped almonds
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 60 g butter
  • 1/4 cup brown sugar
  • 1/4 cup honey, plus more for serving
  • 1 tsp vanilla extract
  • Mixed berries for serving
  • 900 g of low-fat yogurt without additives

Preparation:

  1. Preheat oven to 200°C.
  2. Line a 9 x 9 inch (23 x 23 cm) square baking dish with foil, leaving an overhang on each side. Grease with nonstick cooking spray.
  3. Combine oats, cranberries, almonds, cinnamon, and salt in a medium bowl.
  4. Place a small saucepan over medium heat. Combine the butter, sugar, and honey. Stir until the butter melts and the mixture begins to simmer. Add the vanilla extract and stir. Remove from heat.
  5. Pour the oil over the oats and mix well. Transfer to the prepared baking sheet and use a spatula to spread the oats into an even layer.
  6. Bake until crisp and golden brown, 15-20 minutes. Transfer to a wire rack and cool. Using foil, remove the granola from the pan and place it on a work surface. Crumble into pieces. Serve with berries, yogurt, and honey.
