Energy bars with oatmeal and peanut butter

Ingredients:

  • Cooking spray
  • 1/2 cup honey
  • 1/2 cup natural creamy peanut butter
  • 2 tbsp. maple syrup
  • 1 tbsp. l. canola oil
  • 1/4 cup brown sugar
  • 1/4 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 2 cups of oatmeal
  • 2 cups brown rice muesli
  • 1/4 cup toasted wheat germ
  • 1/2 cup chopped roasted peanuts
  • 1/2 cup chopped dried apricots
  • 1/2 cup chopped dried figs
  • 1/2 tsp salt

Preparation:

  1. Spray a 9 x 13-inch baking dish with cooking spray and set aside.
  2. In a small saucepan over medium heat, combine the honey, peanut butter, maple syrup, canola oil, brown sugar, and cinnamon. Stir and cook for about 3-5 minutes, until bubbling. Remove from heat and stir in the vanilla extract.
  3. In a large bowl, combine oats, rice muesli, wheat germ, peanuts, dried apricots, figs and salt.
  4. Pour the peanut mixture over the cereal mixture and gently fold it in with a spatula, mixing thoroughly. Transfer to a baking pan, cover with parchment paper, and press firmly into the bottom of the pan. Cool completely (it will cool faster in the refrigerator). Cut into squares or bars.
