Peanut marzipan

Ingredients:

  • 2 cups roasted peanuts
  • 1 cup powdered sugar
  • 1 tsp peanut butter

Preparation:

  1. Using a food processor, pulse the peanuts until coarsely chopped. Add the powdered sugar and peanut butter. Process for 2 minutes, scraping down the sides as needed, until a compact ball of dough forms.
  2. Remove the peanut marzipan mixture from the food processor. Using a rolling pin, roll the dough out to a thickness of 2 cm. Use 5 cm round cookie cutters to cut out marzipans. Carefully place them on a baking sheet lined with waxed or parchment paper. Form the dough into a ball and roll it out again to make the remaining marzipans.
  3. Serve immediately or wrap in parchment paper and refrigerate.
