Meatloaf with cheese topcook.tomathouse.com
Ingredients:
- 3 15cm corn tortillas
- 450 g of ground beef
- 450 g of minced pork
- 2 large eggs, lightly beaten
- 1 small onion, grated
- 1 clove of garlic, finely chopped
- 1 tsp chili pepper powder
- 1 tsp ground cumin
- 1 cup canned chopped tomatoes with green chili peppers, drained
- 230 g processed cheese, cut into 4 rectangular sticks
- 0.5 cup pickled jalapeno pepper, sliced
- 1 cup ketchup
Preparation:
- Preheat oven to 175°C and line a baking tray with baking paper.
- Pulse the tortillas in a food processor until crumbly and transfer to a large bowl. Add the ground beef and pork, eggs, onion, garlic, chili pepper, cumin, 1/2 cup of tomatoes, 1 teaspoon of salt, and 1/2 teaspoon of pepper. Mix by hand until smooth.
- Place the mixture on the prepared baking sheet and use your hands to shape it into a 30cm x 7.5cm log. Make a well in the center of the "log" along its entire length. Place the cheese in the well and top with the jalapeño pepper. Cover the filling with ground meat, making sure it's completely sealed; you should have a loaf measuring 30cm x 10cm.
- Combine the ketchup and the remaining 1/2 cup of tomatoes in a medium bowl. Spoon the mixture over the entire surface of the meatloaf.
- Bake for about 1 hour, until the internal temperature reaches 165°F (74°C). Let cool for 10 minutes before transferring to a serving dish and slicing.
