Grilled shrimp skewers with mustard-dill dressing and yogurt sauce with olives

Ingredients:

  • 450 gr. (21-24 pcs.) shrimp, clean and remove the intestinal vein
  • 1 teaspoon paprika
  • 1/4 cup mayonnaise
  • 3 tablespoons white wine vinegar
  • 2 tsp Dijon mustard
  • 1 teaspoon whole grain mustard
  • 2 tbsp chopped dill
  • 1 cup Greek yogurt
  • 1/4 cup pitted olives
  • 1 tbsp fresh oregano leaves
  • 1 lemon, squeeze out the juice
  • 2 cloves garlic, finely chopped
  • 15cm wooden skewers, soak in water for 30 minutes.
  • Canola oil

Preparation:

  1. Preheat the grill to high. Thread 3 shrimp onto 2 skewers, laying them flat. Repeat with the remaining shrimp. Brush with oil and season with paprika, salt, and pepper to taste. Grill until golden brown on both sides and cooked through, about 1.5 minutes per side.
  2. In a medium bowl, combine mayonnaise, white wine vinegar, mustard, and dill, season with salt and pepper to taste. Place the shrimp on a platter and immediately drizzle with the mustard dressing.
  3. In a food processor, combine the yogurt, olives, oregano, lemon juice, and garlic and process until smooth. Season with salt and pepper to taste. Serve the shrimp with the sauce.
