Ingredients:
- 4 medium ripe banana
- 500 ml vanilla ice cream
- 4 tbsp (60 g) butter
- 0.5 cup brown sugar
- 1/4 teaspoon salt
- 0.5 tsp pumpkin pie spice
- 1 teaspoon vanilla extract
- Oil for greasing the grill
Preparation:
- Preheat a grill or grill pan to medium heat.
In a small saucepan over medium heat, melt the butter. Add the brown sugar, salt, and pumpkin pie spicesBring to a boil, stirring until the sugar is completely dissolved. Cook over low heat for about 5 minutes until the mixture thickens. Remove from heat and stir in the vanilla.
- Slice each banana lengthwise, leaving the peel on, and coat with the brown sugar cream sauce. Grease a grill pan with oil and place the bananas cut-side down. Grill for about 4 minutes, until caramelized. Flip the bananas over and grill for about 5 more minutes, until the peels are blackened and the bananas are soft and warm inside. Baste frequently with the sauce during cooking.
- Remove from grill to a platter and serve with a scoop of ice cream and any remaining sauce.
