Slider burgers with a juicy beef patty

Ingredients:

  • 360 g ground beef (80% lean)
  • 360 g of minced pork
  • 60 g butter
  • 1 cup onion, thinly sliced
  • 1 teaspoon white pepper
  • 2 teaspoons of salt
  • 1 teaspoon black pepper
  • 1/4 cup equal parts mayonnaise and mustard
  • 1 teaspoon lemon juice
  • 1 tbsp. finely shredded romaine lettuce
  • 12 slices cheese (Gruyere, Swiss, or Gloucester)
  • 12 sweet buns (miniature sliders 5-6.5 cm in diameter), fry

Preparation:

  1. Place the butter, onion, white pepper, and 1 teaspoon of salt in a saucepan and cook over high heat until the butter melts. Reduce the heat to medium and cook for another 7-8 minutes, until the onion is lightly browned around the edges.
  2. In a bowl, combine the beef, pork, remaining 1 teaspoon of salt, and black pepper. Don't overmix, or the patty will be too dense. Divide the mixture into 12 balls (60 g each), then form them into patties approximately 6 cm in diameter.
  3. Preheat grill and cook patties for 4-5 minutes per side, or until internal temperature reaches 160°F (71°C).
  4. Mix the mayonnaise and mustard mixture with lemon juice and romaine lettuce. Top the bottom half of the bun with the dressed lettuce, the patty, some caramelized onions, and your choice of cheese. Top with the top half of the bun and serve.
