Spicy Jicama Salad with Citrus Dressing and Pomegranate

Ingredients:

  • 1 medium jicama, peeled and diced
  • 4 oranges
  • 1/4 teaspoon ancho chili powder
  • 3 tbsp. l. olive oil
  • Juice from 1 lime
  • 3 green onions, chopped
  • 2 tablespoons fresh cilantro
  • Seeds from 1/2 pomegranate

Preparation:

  1. Using a paring knife, peel the oranges and cut out the segments, leaving the white membranes, which you then squeeze over a large bowl to extract the juice.
  2. Whisk together the orange juice ancho chili powder, salt and pepper to taste, olive oil, and lime juice. Add orange wedges and jicama. Before serving, garnish with green onions, cilantro, and pomegranate seeds.
