Pizza Supreme with ravioli crust

Ingredients:

  • 3 tbsp olive oil + extra for greasing
  • 1 and 3/4 tbsp. grated parmesan
  • 900 g large square ravioli with cheese
  • 2 large eggs, beaten
  • 1.5 tbsp. pizza sauce
  • 2 tbsp. grated dry mozzarella
  • 1 cup crumbled prepared Italian sausage
  • 3/4 cup sliced ​​pepperoni
  • 1 red bell pepper, diced
  • 8 champignons, thinly sliced
  • A quarter of a red onion, thinly sliced
  • 60 g thin slices of ham, cut into pieces
  • 1 cup basil, chopped
  • Special equipment: a small baking sheet with sides

Preparation:

  1. Position a rack on the bottom shelf of the oven and preheat the oven to 220°C (425°F). Bring a large pot of salted water to a boil for the ravioli. Grease a rimmed baking sheet with olive oil and sprinkle 1/2 cup of grated Parmesan cheese over the entire surface and sides.
  2. Cook the ravioli until al dente, 1-2 minutes less than the package directions. Drain and pat dry. In a large bowl, combine the eggs, olive oil, 1/2 cup grated Parmesan, and 1/2 teaspoon salt. Arrange the ravioli on a baking sheet in a single layer, overlapping just the edges. Sprinkle with 1/2 cup Parmesan.
  3. Bake the ravioli until golden brown and crispy on top and bottom, about 25 minutes.
  4. Preheat oven to broil. Spread pizza sauce on top of ravioli. Sprinkle with mozzarella and the remaining 1/4 cup Parmesan. Top with Italian sausage, pepperoni, bell peppers, mushrooms, onions, and ham. Broil in the oven until the cheese is golden brown and bubbly, about 3 minutes. Sprinkle with basil before serving.
