Ingredients:
- 1.5 tbsp. Graham flour
- 3/4 cup all-purpose flour, plus extra for work
- 1 teaspoon ground ginger
- 0.5 tsp ground cinnamon
- 0.5 tsp salt
- 1/4 tsp ground allspice
- 1/4 tsp baking powder
- 1/4 teaspoon of baking soda
- 6 tablespoons unsalted butter, room temperature
- 2/3 cup light brown sugar
- 1/4 cup honey
- 1/4 cup water
- Cooking spray
- Royal icing, for decoration
- Gel food coloring (optional)
Preparation:
- In a medium bowl, combine the flours, ginger, cinnamon, salt, allspice, baking powder, and baking soda. In a large bowl, beat the butter, brown sugar, and honey with a mixer on medium-high speed until light and fluffy, about 3 minutes. Beat in the water until the mixture is smooth and glossy, 2-3 minutes. Reduce the mixer speed to low and beat in the flour mixture. Divide the dough in half and place on 2 pieces of plastic wrap; form into disks. Wrap and refrigerate until firm, at least 4 hours or preferably overnight.
- Position racks in the upper and lower thirds of the oven; preheat oven to 375°F (190°C). Spray 2 baking sheets with cooking spray. Working with one piece of dough at a time, roll it out on a floured work surface to a thickness of 1/4 inch (0.3 cm). Cut out shapes using a 4-inch (10 cm) cookie cutter. Place 1 inch (2.5 cm) apart on the prepared baking sheets; refrigerate for 10 to 20 minutes (if the dough is too soft, refrigerate for an additional 15 minutes). Gather scraps and cut out more shapes; refrigerate.
- Bake, rotating the baking sheets halfway through, until the cookies are firm and lightly browned, 10 to 15 minutes. Let cool completely on the baking sheet.
- Decorate the cookies with royal icing (tint it with food coloring if desired). Let set for 1 hour.
