Baked cauliflower with tomatoes topcook.tomathouse.com
Ingredients:
- 7 cups small cauliflower florets
- 3 plum-shaped tomatoes, coarsely chopped
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1.5 tsp Roman cumin seeds (cumin)
- 1/4 teaspoon turmeric
- Pinch cayenne pepper
- 1/2 tsp salt
- Freshly ground pepper
- Juice of 1 lemon
- Chopped cilantro
Preparation:
- Preheat oven to 250°C. Toss cauliflower and tomatoes with olive oil, then stir in garlic, cumin, turmeric, cayenne pepper, and salt and ground pepper to taste. Spread the mixture on a baking sheet. Place in the oven and bake for approximately 20-25 minutes. Drizzle with lemon juice and sprinkle with cilantro.
