Italian Meatloaf topcook.tomathouse.com
Ingredients:
- 1.3 kg ground beef
- 1/4 tbsp. + 2 tbsp. l. olive oil
- 4 tsp (about 6 cloves) chopped garlic
- 2 medium onions, diced
- 2 red bell peppers, seeded and finely diced
- 0.5 cup chopped basil leaves
- 2 tbsp chopped parsley leaves
- 4 eggs
- 1 teaspoon of salt
- 0.5 tsp black pepper
- 2 tbsp. grated parmesan
- 1.5 cups breadcrumbs
- 2 tablespoons Worcestershire sauce
- 2 tablespoons balsamic vinegar
- 1 tbsp. marinara sauce
Preparation:
- Preheat oven to 170°C.
- In a medium skillet over medium heat, heat 1/4 cup olive oil and add the garlic. Cook for 1 minute, then add the pepper and onion and cook until soft. Let cool.
- In a small bowl, combine the basil, parsley, and eggs, then season with salt and black pepper. In another small bowl, combine the Parmesan and breadcrumbs. In a large bowl, use your hands to combine the ground beef, herbs, eggs, Parmesan, and breadcrumbs, Worcestershire sauce, vinegar, and the remaining 2 tablespoons olive oil. Do not stir for long.
- Place the meat mixture in a greased loaf pan. If you don't have a loaf pan, shape the meat mixture into a loaf shape using your hands on a greased baking sheet or in a baking dish. Brush with marinara sauce, spreading it evenly over the entire surface.
- Bake for approximately 50-60 minutes, or until a meat thermometer inserted into the center of the meatloaf registers 160°F (71°C). Remove from the oven and let rest for 5 minutes. Slice the meatloaf and serve.
