Napoleons with vanilla pudding and raspberries

Ingredients:

  • 3 cups of 100 grams. vanilla pudding
  • 2 tablespoons of honey
  • 2 tablespoons raspberry fruit paste
  • 1 tsp vanilla extract, divided
  • 2 cups fresh raspberries (set aside 4 berries for garnish)
  • 2 packages of 100 grams. crispy wafer cookies

Preparation:

  1. In a small bowl, gently stir together the honey, fruit paste, and 0.5 teaspoon vanilla extract. Add the raspberries and stir to coat.
  2. In a medium bowl, combine the pudding with the remaining 1/2 teaspoon vanilla extract.
  3. To assemble, place the wafer cookies on a plate. Top with 1 heaping tablespoon of pudding and 1 heaping tablespoon of raspberries, and top with a second wafer cookie. Top with another spoonful of pudding and raspberries, and top with a third wafer cookie.
  4. Place a small spoonful of pudding on top and garnish with the reserved raspberries. Repeat with the remaining ingredients.
