Belgian waffles with chicken

Ingredients:

  • Vegetable oil, for greasing the frying pan
  • 1/4 cup hot sauce
  • 1 large egg, lightly beaten
  • 0.5 kg chicken fillet
  • 3/4 cup wheat flour
  • 1 teaspoon poultry seasoning
  • Table salt and freshly ground black pepper
  • 3 tbsp (45 g) unsalted butter
  • 2 green onions, plus extra for garnish
  • 1.5 cups low-sodium chicken broth
  • 4 ready Belgian or Viennese waffles
  • Maple syrup, for serving

Preparation:

  1. Heat 2.5 cm of vegetable oil in a large cast-iron skillet or heavy-bottomed frying pan over high heat. In a medium bowl, combine the hot sauce and egg; stir the chopped chicken into the mixture until completely coated.
  2. Combine flour, seasoning, salt, and pepper to taste in a medium bowl. Set aside 3 tablespoons of the mixture in a separate bowl; dredge the chicken breasts in the remaining flour mixture until completely coated. Shake off any excess flour.
  3. Fry the chicken in a hot skillet with oil until cooked through and browned, about 2-3 minutes per side. Transfer the chicken pieces to a wire rack to cool and drain any excess oil.
  4. Place the butter and remaining flour and seasoning mixture in the same pan. Add the chopped onion and chicken broth. Bring the mixture to a simmer, stirring until smooth. Meanwhile, prepare the waffles.
  5. Place the waffles separately on plates and pour a little maple syrupPlace the fried chicken on top and pour the sauce over it. Garnish with green onions.
