Lazy oatmeal in a jar with pumpkin

Ingredients:

  • 1/3 cup rolled oats (gluten-free, if desired)
  • 1/3 cup pumpkin puree
  • 1 teaspoon chia seeds
  • 1/3 cup almond milk
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 teaspoon maple syrup
  • Optional: chopped pecans, maple syrup

Preparation:

  1. Place all ingredients, except the optional ingredients, in a jar or other container with a tight-fitting lid and mix thoroughly. Seal the jar and refrigerate overnight or for at least 5 hours. In the morning, add additional liquid, if desired. Once you've reached the desired consistency, add the nuts and syrup to the oatmeal.
